Have you checked pending codes? pretty sure knock sensor doesnt cause the light to come on but shows as a pending code when you pull them.

As for how the MPG is measured, i dont know specifically...

I agree these are pretty much the run of the mill "ebay" projector. Good news is an E55 projector swaps right in and gives you a nice sharp cutoff. And bixenon capabilities which means if you wire it...

Coolant also burns white and smells sweet. From the description of your problems i would say its a head gasket problem allowing coolant into a cylinder and the low coolant level and air in the system...
