Certainly sounds like a MAF problem as other members have pointed out, but it isn't necessarily the MAF.

I've had issues that matched the symptoms of a bad MAF and it turned out that the wiring...

alright. There's no way to just scrape that junk off though? I've been trying to rub at it with something slightly abrasive and it's doing it but extremely slowly.

As a final update. I've put probably about 110 +/- 5 miles since the fix on the connector earlier this week and the car is running fine. Thanks for all the help, glad the car is running fine.

So far so good. No drama on the commute home so I'm fairly confident the issue was the MAF connector. I'll update again after a bit more mileage to confirm.

I changed my spark plugs less than 30k ago. The electrical tape seems to be doing the job. I suppose i just need a new MAF connector. The wires were frayed and exposed to each other.
