They rarely ever just fail totally.

The correct refrigerant charge should be verified. 150 psi static sounds a little high.
And there is really no way to determine the charge accurately other than by weight.

I agree on all the other stuff, but head gaskets are unnecessary in my opinion.
If you suspect it needs those for any reason, I would choose another engine just to be safe.

All sensors, manifolds, ecu and wiring should be from the 2001 car, not the 2000 engine....

Those connectors you pictured are not for the air bag system. They are possibly the seat motor or seat heater connectors.
The air bag connectors are always yellow.

2004 Maxima will only accept the 04 transmission. The 05-06 will interchange with each other.
Not sure why, but something changed in the wiring of the 2005 car that makes the 04 version unique.
