Unplug the maf again, actually
drive the car for a while with the maf unplugged(yes, 2500rpm will be your redline with it unplugged, this is normal, it's called "limp home mode") just ease the car around, don't hit the 2500rpm if at all possible..
If the car doesn't "act up" during this test, then you have narrowed it down to either the maf harness not getting a good connection, or a bad maf.
